What Sho (Demo Mode) means.
Sho (or "Demo" depending on model) puts the unit into showroom mode: the interior lights work, the display works, and the door alarm works, but the compressor is disabled so the unit never actually cools. This mode exists so Viking dealers can run the unit on a showroom floor without the noise and energy cost of an actively-cooling fridge. It is almost always activated by accident, by a curious finger or a delivery crew who forgot to turn it off. If your Viking is "not cooling but everything else works," check this first.

Power cycle activated demo mode on certain firmware versions.

On most Viking models: press and hold the "Alarm" and "Power Cool" buttons together for 5 seconds.

On built-in column models: press and hold the Power button until "Sho" disappears.

If the buttons differ on your model, check the rating plate for the model number and consult the owner manual.

The compressor should kick in within 60 seconds of exiting demo mode.
